Avocado & Tomato Sandwich

Ingredients

2 x Ripe Peruvian Hass avocado, halved, peeled, and stone removed

Squeeze ½ lime

2 x Tomatoes

Handful salad leaves

8 x Slices bread

Preparation Time

5-10 minutes

Method

  1. Slice the avocados and if not serving immediately, squeeze a little lime juice over the slices to help prevent browning
  2. Slice the tomatoes, then arrange the salad leaves on top of half the slices of bread
  3. Then layer the sliced tomato and avocado on top of the salad leaves before topping with the remaining slices of bread
