Avocado & Tomato Sandwich
Ingredients
2 x Ripe Peruvian Hass avocado, halved, peeled, and stone removed
Squeeze ½ lime
2 x Tomatoes
Handful salad leaves
8 x Slices bread

Preparation Time
5-10 minutes
Method
- Slice the avocados and if not serving immediately, squeeze a little lime juice over the slices to help prevent browning
- Slice the tomatoes, then arrange the salad leaves on top of half the slices of bread
- Then layer the sliced tomato and avocado on top of the salad leaves before topping with the remaining slices of bread
