Baked Avocados

Ingredients

2 Medium ripe Hass avocados

3 Spring onions cut into slices

1 Pepper, cut into small pieces

1 Chicken breast, cooked and diced

2 Tomatoes, diced

120g Cheddar cheese, grated

Dash of Worcestershire sauce

Serves

Method

  1. Preheat the oven to 180° C
  2. Prepare the avocados by cutting lengthways all the way around the stone.
  3. Do not pull the two halves apart
  4. Wrap the avocados in tin foil and then place in the oven for approximately 40 minutes
  5. Place all other ingredients, except the Worcestershire sauce, into a bowl
  6. Remove the avocados from the oven, pull apart removing the stone
  7. Spoon the mixture into the middle of each avocado half
  8. Place the avocados under the grill for approximately 10 minutes or until golden
  9. Remove from the grill and add a dash of Worcestershire sauce before serving
