Ensalada Fantasia

Ingredients

4 medium tomatoes, sliced

250g small artichoke hearts in oil, halved

350g buffalo mozzarella cheese, sliced

2 Hass avocados, peeled and sliced

2 tablespoons fresh basil, chopped

Thick French dressing

Salt and pepper

Serves

4

Method

  1. Cover one quarter of a small plate with the prepared avocado
  2. Repeat for the tomatoes, artichoke hearts and mozzarella
  3. Drizzle the dressing over the plates and season well
